EFSA’s New Pesticide Episode Explains What Food Residues Mean for Home Cooks
A new European Food Safety Authority episode explains how pesticide use, residues and alternatives are assessed—and what home cooks can do with that information.

The European Food Safety Authority has published a new episode of its Science on the Menu podcast about pesticides, residues and the search for safer alternatives. For home cooks, the practical message is measured rather than dramatic: pesticide residues are assessed through a chain of evidence, while ordinary produce-handling habits still matter for food hygiene.
EFSA’s Episode 42, “Pesticides: the good, the bad and the ugly”, brings together host Edward Bray and Tobin Robinson, EFSA’s head of unit for plants, environment and ecotoxicology. The discussion covers why pesticides are used, how traces can move through food and the environment, what exposure means for health and wildlife, and which alternatives are being explored.
What EFSA has actually announced
This is an educational science release, not a recall or a warning about a particular fruit, vegetable or brand. The episode looks at pesticides as a broad category of products used to protect plants from pests and diseases. It also examines an organic pesticide used to protect peaches, making the point that “organic” does not automatically mean a substance needs no safety assessment.
That distinction is useful in the kitchen. A consumer should not read the episode as evidence that all conventionally grown produce is unsafe, or that organic produce requires no washing. It is better understood as an explanation of how regulators ask a more precise question: after a product is used as intended, what residues could remain, where might they go, and what level of exposure would consumers receive?
How residue risk is assessed
In the episode, EFSA explains that assessment follows what happens to a pesticide after it is applied. Some of the substance may remain on a plant; some may be washed away by rain, move into soil or reach groundwater; and some substances break down relatively quickly. Scientists examine how long the substance persists and estimate the residues that could be present when a crop reaches the market.
The timing between application and harvest is part of that calculation. So is the possibility that washing the crop may remove some material. EFSA then compares the expected residue exposure with toxicological information and food-consumption patterns. Member States also consider local diets, because exposure depends on how much of a particular food people eat and how often they eat it.
This is the context behind maximum residue levels. They are not a promise that a food contains no trace at all. They are regulatory limits established using health-based guidance values and exposure estimates. The episode’s broader point is that a trace and a demonstrated health hazard are not interchangeable terms, and that risk assessment depends on dose, exposure and the properties of the substance.
What to do when produce comes home
The podcast does not replace basic kitchen hygiene. USDA’s guidance on washing food gives a concrete routine for fresh fruits and vegetables:
- Wash your hands, clean the sink and prepare clean utensils before handling produce. Keep fruits and vegetables away from juices from raw meat, poultry and seafood.
- Rinse fresh produce under clean, running tap water before eating or preparing it. Do this before peeling or cutting, because the outside can transfer dirt and microorganisms to the inside.
- Scrub firm produce such as apples or potatoes with a clean produce brush. Handle delicate berries and leafy vegetables gently so they are not damaged.
- Do not use soap, detergent, bleach, disinfectant or commercial cleaning chemicals on food. These products are not a substitute for rinsing and can leave residues that should not be eaten.
- Cut away bruised or damaged areas, dry the produce with a clean towel or paper towel, and refrigerate cut fruit or vegetables promptly.
These steps are primarily about reducing dirt, microorganisms and cross-contamination. They should not be presented as a guaranteed way to remove every pesticide residue. EFSA’s episode discusses washing as one factor in the residue assessment, but it does not provide a universal percentage reduction for household rinsing. That uncertainty is a reason to avoid exaggerated “detox” claims.
Why the alternatives matter
EFSA’s discussion also looks beyond the shopping basket. The agency describes integrated pest management as a combination of available tools rather than a single replacement for every pesticide. Traditional practices such as crop rotation can help prevent pests and diseases from building up. Newer approaches include more precise application, mechanical weed removal and technologies that target only affected areas instead of treating an entire field.
That does not mean agriculture can simply remove every pesticide overnight. The episode presents the transition as a practical challenge: farmers need reliable ways to protect crops, while regulators and researchers work toward systems that use fewer chemical pesticides and reduce reliance on the most hazardous options.
For home cooks, the useful takeaway is straightforward. Buy and prepare produce normally, follow current recall advice when it applies, rinse fresh fruits and vegetables with running water, and reject chemical-washing shortcuts. EFSA’s new episode adds the missing context: food-safety decisions are built around evidence about use, residues and exposure—not around the assumption that a trace is either automatically harmless or automatically dangerous.
