A FAO culinary showcase connected Indonesian sago, bananas and tuna with the farming, processing and digital tools shaping how local ingredients reach the kitchen.

What reaches a plate can begin long before a recipe is chosen. At a recent FAO culinary showcase in Rome, Indonesian sago, bananas, tuna and local spices became a practical way to show how farming innovation can stay connected to food culture. The event did not present a new packaged product or a restaurant trend. It linked smart-farming projects with the everyday question of how local ingredients become useful, marketable food.
As FAO reports, the showcase was organised by the Embassy of Indonesia in Rome and FAO’s Indonesia country office as part of the organisation’s first Global Conference on Smart Farming. Guests were invited to taste dishes built around food produced or supported through initiatives in different parts of Indonesia. The menu was deliberately regional: it was meant to make the connection between farms, processing, cooking and consumers visible.
A menu built around sago
The centre of the presentation was sago, a staple with deep cultural importance for Indigenous communities in Papua. The first dish was papeda with yellow tuna fish soup, pairing sago with a fragrant broth flavoured with turmeric and local spices. A spicy Indonesian sago fried noodle dish showed how the ingredient can move beyond a single traditional format. Dessert was eurimoo, made with sago and ripe lady-finger bananas from East Java.
That variety matters for practical cooking. Sago was not treated as a novelty garnish; the event showed it as flour and as a base for noodles, a rice analogue and sweet dishes. For home cooks outside Indonesia, the useful point is not that a single imported ingredient can replace familiar staples in every recipe. It is that processing determines how flexible an ingredient becomes. A crop can stay local while still supporting several formats, from a savoury bowl to a dessert.
Why processing is part of the food story
FAO’s account connects the showcase to work with communities in Yoboi, Papua, where support for a small-scale sago processing unit has reduced processing time from several days to around five hours. A separate FAO report on the Yoboi project says the equipment is intended to help the community produce value-added sago products that meet food-safety standards and reach wider markets.
That is an important distinction. “Smart farming” is often reduced to sensors, apps or automated equipment, but the FAO example includes the stage after harvesting. Faster, more consistent processing can affect the quality of flour, the range of foods a community can make and the distance a product can travel. It can also give producers more control over when and how their crop is sold. In kitchen terms, the ingredient arrives with more potential already built into it.
From field data to everyday food
The showcase also referenced several other Indonesian initiatives. A smart fisheries village in West Java was part of the wider story, as were young chilli growers in Sumatra using greenhouse technology. In East Java, banana farmers are being supported with precision agriculture and internet-connected soil monitoring, including fertilisation recommendations tailored to field conditions.
These examples do not mean that technology guarantees better food, and FAO does not describe them as a replacement for local knowledge. The organisation’s message is more measured: data and digital tools can help farmers make better decisions when they are affordable, accessible and adapted to the people using them. The conference also emphasised that farmers should not be left with expensive systems, new dependencies or information they cannot use.
For shoppers and cooks, that principle is worth keeping in mind. Traceability, monitoring and better processing may happen out of sight, but they influence whether ingredients are available, consistent and suitable for different kinds of cooking. When buying unfamiliar staples such as sago flour or sago noodles, the practical checks remain simple: read the label, follow the product’s storage and preparation directions, and use only ingredients sold through a reliable food channel. The Rome showcase is not a tested home recipe, so its dishes should be understood as examples of culinary use rather than instructions to reproduce without the right ingredients and method.

Smart farming is presented not as a gadget story, but as a way to protect food traditions while making local crops easier to process, trade and cook.
