FAO Publishes New Evidence on Additives, Lead and Food-Grade Contaminants

A new FAO announcement explains how the 102nd JECFA meeting will inform international food standards covering additives, processing aids and selected contaminants.

Food-safety decisions often begin long before an ingredient reaches a shopping basket. The latest example comes from the Food and Agriculture Organization of the United Nations (FAO), which has published the summary of the 102nd meeting of the Joint FAO/WHO Expert Committee on Food Additives, known as JECFA.

The announcement matters because JECFA’s work provides scientific advice used by the Codex Alimentarius Commission when developing international food standards. It is not a consumer recall, a new household cooking rule or a verdict on one particular brand. Instead, it is part of the evidence-gathering process behind decisions about how substances used in food are assessed and controlled.

What the latest JECFA meeting covered

According to the FAO announcement, the meeting considered requests from four Codex committees. Those committees cover food additives, contaminants in food, fats and oils, and nutrition and foods for special dietary uses.

The experts reviewed specifications for food additives and processing aids, as well as questions involving lead and contaminants associated with previous cargoes. The substances listed by FAO include monk fruit extract, steviol glycosides, several phosphates, polysorbates, sorbitan esters, thaumatin II, tricalcium phosphate and other compounds used in food production or processing.

FAO also lists work on lead levels in materials such as activated carbon, bentonite and diatomaceous earth. These materials can be relevant to food processing or manufacturing, which is why the assessment is aimed primarily at regulators, scientific experts and the food industry rather than at home cooks.

Why this is useful for everyday food decisions

For shoppers and cooks, the practical value is understanding what an international food-safety announcement can and cannot tell you. JECFA assessments contribute to the scientific basis for standards. They do not replace a product label, a national food-safety alert or medical advice about an allergy, intolerance or diagnosed condition.

They also do not mean that every substance discussed in a technical report is automatically approved for every use. The meeting reviewed different substances and technical questions within a defined risk-assessment framework. Any resulting standards, limits or authorisations still depend on the relevant regulatory process in the market where a food is sold.

This distinction is especially important when an ingredient becomes the subject of online speculation. A technical review may concern one use, one exposure pathway or one processing context. It should not be broadened into a claim that an entire category of foods is safe or unsafe. For a household decision, the most reliable sequence remains simple: read the label, check the current advice from the appropriate national authority and follow the preparation and storage instructions for the food in front of you.

How the scientific process works

JECFA’s role is to assess risks using scientific evidence supplied and reviewed through an internationally recognised process. The summary report for the 102nd meeting records the conclusions of the committee’s work, while the broader Codex process turns scientific advice into discussions about standards and international guidance.

That separation between assessment and regulation is useful. Scientists evaluate hazards and exposure; risk managers and standard-setting bodies then decide how the evidence should be reflected in food controls. The result is designed to support consumer protection while also helping countries trade food under clearer, shared expectations.

It is also why the announcement includes technical names that may look unfamiliar in a kitchen. A cook does not need to calculate exposure to a phosphate or identify a processing aid by sight. Those tasks belong to the food-control system. The consumer-facing benefit is indirect: better evidence can support more consistent rules, clearer controls and more targeted action when a genuine risk is identified.

What home cooks should do now

  1. Do not treat a scientific announcement as a recall. If a product-specific warning exists, follow the notice issued by the relevant food-safety authority.
  2. Use the label for ingredient information. Technical assessments and food labels serve different purposes. The label is the place to check the ingredients and allergens in the product you are buying or serving.
  3. Keep preparation basics in place. Clean hands and surfaces, separate raw and ready-to-eat foods, cook food appropriately and refrigerate perishable leftovers promptly.
  4. Check the context before sharing a claim. A JECFA review may relate to a particular substance, use or exposure assessment. Do not extend its conclusion beyond what the official document says.

The FAO’s latest announcement is therefore best understood as a behind-the-scenes food-safety update. It does not change what most people need to do at the stove tonight. It shows, however, how the evidence supporting food standards is refreshed: specialists review substances and contaminants, international committees examine the advice, and regulators use that work when setting or updating controls.

For everyday cooks, that is the useful takeaway. Food safety is not only about the final cooking step. It also depends on the standards, assessments and monitoring systems that operate throughout the food chain. When a new official assessment is published, the responsible response is neither alarm nor dismissal: read the scope, check the source and apply only the advice that actually concerns your food.
