EFSA Lowers TFA Safety Level: What Cooks Should Know

EFSA has lowered its dietary safety benchmark for trifluoroacetic acid after reviewing new evidence. Here is what the change means for food safety at home.

The European Food Safety Authority has lowered the safe level it uses for dietary exposure to trifluoroacetic acid, or TFA, after reviewing new scientific evidence. The announcement, published on 22 July 2026, is relevant to anyone trying to understand what food-safety headlines mean at home: it changes a risk-assessment benchmark, not the instructions for cooking a particular ingredient.

EFSA says the European Commission and EU Member States will take the new values into account as they discuss measures to keep consumers protected. The agency does not announce a consumer recall, identify a contaminated brand or tell households to discard a named food. That distinction matters, because a lower health-based guidance value is not the same thing as proof that a food on a kitchen shelf is unsafe.

What TFA is and how it can reach food

TFA is a chemical that can come from several sources. EFSA describes it as a breakdown product of some pesticides and of certain per- and polyfluoroalkyl substances, commonly grouped as PFAS. The substance can move through groundwater and soil and can reach food crops. The authority also notes that EU countries are required to monitor PFAS in drinking water, while other monitoring programmes track PFAS levels in food.

That pathway is why the news belongs in a practical food-safety conversation, even though it is not about a recipe or a piece of kitchen equipment. The issue begins in the wider food chain. By the time a cook buys vegetables, grains or other ingredients, the relevant controls are mainly regulatory monitoring, risk assessment and any official measures taken by national authorities.

What changed in EFSA’s assessment

EFSA lowered the acceptable daily intake, or ADI, for TFA from 0.05 to 0.014 milligrams per kilogram of body weight per day. In the agency’s wording, the new ADI is about 3.5 times lower than the previous value. An ADI is a long-term exposure benchmark: EFSA defines it as an estimate of the amount that can be consumed daily over a lifetime without appreciable risk, expressed relative to body weight.

The assessment also sets an acute reference dose of 0.07 milligrams per kilogram of body weight. This is a different type of benchmark for short-term exposure, so it should not be read as a daily target or as a limit printed on a packet. Neither number tells a shopper how much TFA is in a specific food. They are values used to support decisions about exposure and consumer protection.

EFSA says the updated values reflect new evidence showing, among other effects, that TFA changes levels of thyroxine, a hormone produced by the thyroid gland. The agency also says that questions remain about possible long-term toxicity, carcinogenicity and developmental immunotoxicity. It introduced an additional uncertainty factor when calculating the ADI to account for those uncertainties.

What this means in an ordinary kitchen

There is no new TFA cooking method in the announcement. EFSA does not provide a time, temperature or washing step that would remove TFA from food, and it does not claim that home cooking can control this exposure. It follows that cooks should not invent a “detox” technique, change a recipe on the basis of the headline alone or assume that rinsing, peeling or boiling makes a particular product safe.

The sensible practical response is to separate three questions. First, is there a current official alert or recall for the product in front of you? If so, follow the instructions from the relevant national food-safety authority and the retailer or manufacturer. Second, is the information describing a scientific benchmark, as this EFSA announcement does? If so, it is about how authorities assess risk, not an automatic warning about every food in the same category. Third, is there a personal medical concern? A population-level ADI cannot calculate an individual’s exposure or replace advice from a qualified health professional.

For day-to-day cooking, keep following the food-safety instructions that apply to the ingredient: respect official recall notices, read labels and use normal clean, separate, cook and chill practices where relevant. Those habits address familiar handling risks; they should not be presented as a solution to TFA, which EFSA discusses as an environmental and food-chain contaminant.

What to watch next

The next steps sit with the European Commission and EU Member States, which will consider the revised values when discussing protective measures. EFSA also says it is working with the European Chemicals Agency on how PFAS pesticides break down into TFA and how the substance behaves in soil and water. That work is expected to continue into next summer, according to the agency.

For cooks, the useful takeaway is therefore precise rather than dramatic: this is a new official assessment of a chemical exposure benchmark, not a product recall and not a test of a kitchen workaround. Check national food-safety notices for any action that applies to a food you have bought, and avoid treating a scientific number as a reason to make unsupported claims about an individual ingredient.
