FAO highlights a practical cocoa fix: more shade for stronger harvests

A new FAO story shows how cocoa farmers in Côte d’Ivoire are using shade trees, agroforestry and cooperative support to build more resilient food supply chains.

The Food and Agriculture Organization of the United Nations has highlighted a practical response to one of cocoa farming’s biggest challenges: restoring shade to plantations. In a new story from Côte d’Ivoire, FAO describes how farmers are combining cocoa with fruit, timber and shade trees to protect plots from heat, improve biodiversity and support more resilient production.

The report matters beyond the farm. Cocoa is the main ingredient in chocolate, and the way it is grown affects the long-term reliability of an ingredient used in baking, desserts and everyday snacks. FAO’s account does not announce a retail price change or a new consumer label. Instead, it documents how farming practices are being adapted to a more difficult climate.

Why cocoa farms are under pressure

Côte d’Ivoire produces more than 40 percent of the world’s cocoa, according to the FAO story, and cocoa supports about one million smallholders in the country. But decades of full-sun, single-crop cultivation have contributed to soil degradation and biodiversity loss. Deforestation has also made growing areas hotter and drier, while drought and less predictable rainfall are increasing the pressure on farmers.

That creates a difficult balance. Cocoa trees need enough light to grow, but excessive exposure to heat can damage the wider system that supports production. When soil loses structure and moisture, farmers face higher risks from weather shocks and may need more labour and inputs to keep yields stable.

FAO presents agroforestry as one part of the response. Rather than treating a cocoa plot as a single-crop field, farmers can maintain a layered system in which cocoa trees grow beneath useful shade and fruit trees. The approach is designed to improve the farm environment while keeping cocoa production at its centre.

What farmers are changing

The story follows Sylvie Sopie N’Gbesso, a cocoa farmer in southern Côte d’Ivoire who changed an ageing full-sun plot into an agroforestry system. FAO reports that her cocoa production rose from 1,000 kilograms in 2023 to 2,000 kilograms in 2025. That is one documented farm result, not a guaranteed outcome for every grower, but it illustrates why the approach is attracting attention.

Practical work on the plot includes clearing undergrowth, managing weeds, tending cocoa trees and planting species that provide shade or additional income. FAO also describes training on using agricultural waste to make biopesticides and compost. These methods can reduce reliance on some purchased inputs, although they still require knowledge, labour and careful management.

Cooperatives are another important part of the model. Farmers can work together to access workers, pruning tools, tricycles and other equipment that would be difficult to obtain individually. FAO says its PROMIRE project has benefited more than 7,500 cocoa producers and converted more than 3,400 hectares of conventional cocoa plantations into sustainable agroforestry systems. A related project has established agroforestry models across more than 8,100 hectares.

What this means for home cooks

There is no immediate recipe change attached to this announcement, and the story does not guarantee that every chocolate or cocoa product comes from an agroforestry farm. Its practical value is understanding where resilience is being built before an ingredient reaches the kitchen.

For everyday baking, the most useful response is to treat cocoa and chocolate as distinct ingredients rather than interchangeable ones. Cocoa powder, dark chocolate and chocolate chips contain different proportions of fat, sugar and moisture, so they should not be swapped one-for-one without checking the recipe. If a recipe specifies cocoa powder, use that form; if it calls for melted chocolate, follow the stated quantity and method.

A simple pantry routine also helps reduce waste. Check what is already open before buying another pack, keep cocoa powder sealed in a cool, dry cupboard, and store chocolate away from heat, moisture and strong odours. Follow the storage advice and dates printed on the package. Use clean, dry utensils when measuring powders, and keep ingredients protected from moisture that can cause clumping or spoilage.

When a recipe is flexible, prioritise the ingredient already in your cupboard rather than buying a second product for a small quantity. That does not remove the wider pressures on cocoa production, but it avoids unnecessary household waste and makes the most of the cocoa already in circulation.

A farming project, not a consumer certification

FAO’s story describes specific projects, farmers and landscapes. It is not a certification scheme for all cocoa, and it does not establish that every product labelled sustainable has the same production model. Shoppers should still read the information on the product they buy and avoid assuming that a farming story applies automatically to every chocolate bar or baking ingredient.

The larger lesson is that food resilience is built through many practical decisions: protecting soil, managing shade, diversifying farms, sharing equipment and improving access to technical support. For cooks, the link is straightforward. A stable pantry depends on a stable food system, and the work taking place in cocoa-growing regions is part of what keeps familiar ingredients available for future recipes.

FAO’s account offers a useful reminder that the future of chocolate is shaped long before the oven is switched on. More shade on the farm may not change today’s brownie method, but it can help create stronger conditions for the cocoa supply chain behind it.
