FAO Flags Severe Foodborne Risk Linked to Raw Freshwater Fish
A recent FAO article highlights how Streptococcus agalactiae ST283 can cause invasive illness and explains safer ways to buy, handle and cook freshwater fish.

The Food and Agriculture Organization of the United Nations has highlighted an unusual foodborne hazard linked to freshwater fish and aquaculture. In an article published on 20 April 2026, FAO examined Streptococcus agalactiae sequence type 283, or ST283, also known as Group B Streptococcus.
The warning matters because this hazard does not necessarily behave like the food poisoning most people expect. Rather than causing only short-lived digestive symptoms, ST283 has been associated with invasive infections, including bloodstream infections, meningitis and septic arthritis. FAO notes that serious illness has affected people without underlying health conditions.
Why freshwater fish are part of the discussion
FAO says the evidence links exposure to contaminated freshwater fish and aquaculture systems. The possible routes are broader than simply eating a contaminated portion: handling practices along the food chain can also create opportunities for exposure. The organisation stresses that the issue is not fish consumption in general, but the combination of fish type, production environment, preparation and handling.
The evidence base is still developing. FAO’s article draws on a comprehensive scientific review and explains that whole-genome sequencing has helped researchers connect apparently separate human infections with fish and environmental sources. Conventional microbiology alone may not reliably distinguish ST283, which means surveillance and laboratory capacity remain important.
FAO also points out that important questions remain unanswered, including how exposure leads to invasive disease and the absence of quantitative dose-response data. That uncertainty is a reason to use sensible kitchen precautions, not a reason to assume that every freshwater fish product is unsafe.
What home cooks should do
- Do not serve freshwater fish raw or undercooked. This is the clearest practical step. Avoid raw freshwater fish dishes and cook portions thoroughly, especially when the species or production method is unclear.
- Keep the fish cold from shop to refrigerator. FoodSafety.gov advises putting seafood in the refrigerator or freezer within two hours of purchase, or within one hour when it has been exposed to temperatures above 90°F (32°C). Store fish intended for use within two days at 40°F (4°C) or below, using a refrigerator thermometer when possible.
- Separate raw fish from ready-to-eat food. Use a separate cutting board or prepare raw fish after salads, fruit and cooked foods. Wash hands with soap and water for at least 20 seconds after handling it, then clean boards, knives, dishes and worktops with hot, soapy water.
- Cook by temperature, not appearance alone. FoodSafety.gov gives 145°F (63°C) as the general safe internal temperature for most seafood. Check the thickest part with a food thermometer. The flesh should also become opaque and separate easily with a fork, but visual checks are less reliable for thick or uneven pieces.
- Do not rely on freezing to make raw fish safe. Freezing can address some parasite risks, but FoodSafety.gov notes that it does not kill all harmful germs. It is not a substitute for thorough cooking.
- Refrigerate leftovers promptly. Keep cooked fish chilled and avoid leaving it at room temperature for extended periods. When transporting seafood, use a clean cooler with ice or cold packs and keep the lid closed as much as possible.
A useful alert, not a reason to avoid all fish
FAO’s article is a risk-focused update rather than a product recall. It does not say that all freshwater fish are contaminated, nor does it suggest that properly cooked fish is automatically dangerous. Its practical message is narrower: freshwater fish deserve careful sourcing, cold-chain control, separation from ready-to-eat foods and thorough cooking.
Consumers should pay particular attention when buying fish for raw or lightly cooked dishes. If the product’s species, origin or handling history is unclear, the safer choice is to cook it fully. Anyone who becomes seriously unwell after eating or handling raw freshwater fish should seek medical advice and mention the exposure, because invasive foodborne infections may not look like ordinary stomach upset.
The FAO update is a reminder that food safety risks can take different forms. Good kitchen technique remains one of the most practical ways to reduce exposure while keeping fish on the menu.
