WHO and FAO publish new food-safety review of arsenic

A new WHO/FAO monograph updates the scientific evidence on arsenic in food and clarifies what the assessment means for home cooks.

A new World Health Organization and Food and Agriculture Organization monograph gives food-safety authorities an updated scientific review of arsenic in food. Published on 24 July 2026 as WHO Food Additives Series 92, the 454-page publication revisits the evidence that regulators use to assess exposure and decide where prevention and control should focus.

For home cooks, the useful takeaway is measured rather than dramatic: this is a risk-assessment update, not a product recall or a new recipe rule. It does not name a contaminated brand or ask households to discard a particular ingredient. Instead, it gives governments and international standard-setters a deeper evidence base for decisions that can eventually shape food controls, testing and advice.

What the new assessment covers

The review was prepared by the Joint FAO/WHO Expert Committee on Food Additives, known as JECFA, at its one-hundred-and-first meeting. The work was requested by the Codex Committee on Contaminants in Foods and updates earlier JECFA assessments.

The committee examined inorganic arsenic alongside a range of small and complex organoarsenic species. The publication brings together biochemical and toxicological data, observations in humans, scientific literature and data submitted for the assessment. It also reviews analytical methods used to distinguish arsenic species, because “arsenic” is not a single chemical category with one identical behaviour in food.

That distinction matters in practical food safety. The publication is concerned with how hazards are identified and characterised, not with treating every food containing naturally occurring arsenic-related compounds as equally risky. The assessment considers the forms separately and presents dose-response analyses for inorganic arsenic, dimethylarsinate and methylarsonate.

Why processing and exposure are part of the story

The monograph does not stop at toxicology. It also examines how arsenic occurs in food commodities, how it may move from animal feed into food, how samples are collected and how processing can affect the assessment. Dietary exposure estimates from multiple countries and regions are included, alongside material on drinking-water and human breast milk.

That wider scope is important because risk is not determined by a headline about one ingredient alone. It depends on the chemical form, the level present, how often exposure occurs and the wider food and water context. The publication’s role is to assemble those elements so risk managers can compare evidence and choose proportionate controls.

For cooks, this is a reason to be wary of simple online claims that one preparation trick can “remove” a chemical hazard in every situation. The WHO page describes the monograph as a scientific basis for food-safety risk assessment and risk management. It does not present a universal household detox method, a guaranteed cooking workaround or a new consumer target.

What changes now—and what does not

The publication gives regulators updated material for reviewing standards and prevention measures. It may inform future work on monitoring, sampling, food production and international food controls. Those are consequential steps, but they are not the same as an immediate change at the kitchen counter.

Nothing in the announcement identifies a new recall, a newly unsafe supermarket product or a blanket instruction to avoid a food category. Readers should therefore separate three different questions:

  • Is there an active alert? The monograph itself is not an alert. A recall or local advisory would come from the relevant national food-safety authority.
  • Is a cooking method being recommended? This publication is an assessment, not a household method guide. It reviews processing as part of the evidence but does not turn that review into a universal recipe instruction.
  • What is the long-term value? The findings support risk managers who need to update evidence, compare exposure patterns and decide which prevention or control measures deserve attention.

A sensible kitchen response

The most defensible response is to avoid both alarm and overconfidence. Keep following current advice from the food-safety authority where you live, especially if you are managing food for infants, children or anyone with particular dietary needs. Do not change a medically important diet or rely on a social-media claim because a scientific report mentions arsenic.

When a national authority publishes advice that applies to a specific food, water supply or region, use that notice as the practical instruction. Check the date and scope, then follow the stated preparation, sourcing or consumption guidance. If no such notice exists, the new monograph is best understood as background on how food-safety decisions are made—not as evidence that ordinary home cooking has suddenly become unsafe.

The publication is valuable precisely because it keeps the distinction clear. Scientific assessment describes hazards, exposure and uncertainty; risk management decides what action is justified; consumer advice translates that decision into steps people can use. The new WHO/FAO review strengthens the first part of that chain. Any household action should still come from a current, relevant authority.
