WHO’s New Food-Safety Estimates Put Everyday Kitchen Choices in Sharper Focus

The World Health Organization says unsafe food causes about 866 million illnesses and 1.5 million deaths each year. Here is what the June update means for home cooks—and what it does not change.

On 4 June 2026, the World Health Organization released updated estimates of the global burden of foodborne disease. The headline figure is stark: unsafe food causes around 866 million illnesses and 1.5 million deaths annually. But the announcement is not a forecast for this year, a count of a current outbreak or a warning about one particular ingredient. It is a broader assessment of how foodborne hazards affect people worldwide—and a reminder that prevention still begins at every stage of the food chain, including the home kitchen.

What the announcement actually says

WHO’s new analysis covers 42 major foodborne hazards, including bacteria, viruses, parasites and chemicals, across 194 countries from 2000 to 2021. The updated work adds hazards such as metals, rotavirus and Trypanosoma cruzi to the evidence base.

Children under five face almost three times the risk of illness from unsafe food compared with older children and adults. Although they represent about 9% of the world’s population, they experience nearly one third of all foodborne disease cases. Biological hazards caused the majority of illnesses—approximately 860 million in 2021—while chemical hazards accounted for a disproportionate share of deaths. WHO says chemical exposures represented 73% of deaths linked to contaminated food in 2021, with inorganic arsenic and lead among the main contributors.

A burden estimate, not an alarm about dinner

The figures describe population-level risk, not the safety of an individual meal. WHO also makes clear that the assessment does not include every possible hazard or health outcome. Antimicrobial-resistant bacteria, pesticide residues and PFAS were excluded because the available evidence was insufficient for inclusion in this analysis, as were some outcomes linked to hazards such as aflatoxin and listeriosis.

That limitation matters when translating a global announcement into kitchen advice. A headline number cannot tell you whether a particular food in your refrigerator is safe. It cannot replace a product recall, a local public-health notice or the handling instructions on a package. It does show why basic prevention, accurate information and reliable monitoring remain important.

What home cooks can apply today

WHO identifies improved water, sanitation and hygiene, pasteurization and safer food practices as measures that can prevent illness. For concrete household steps, the USDA Food Safety and Inspection Service temperature chart keeps the routine simple: clean, separate, cook and chill.

  1. Clean: Wash hands and preparation surfaces regularly, especially before switching from raw ingredients to food that will be eaten without further cooking.
  2. Separate: Keep raw meat, poultry, seafood and eggs away from ready-to-eat foods. Use separate plates and cutting boards when practical, and prevent raw juices from reaching salads, bread or cooked food.
  3. Cook: Use a food thermometer when safety depends on internal temperature. USDA FSIS lists 165°F (74°C) for poultry and leftovers, 160°F (71°C) for ground meats and eggs, and 145°F (63°C) for fish and shellfish. Beef, pork, lamb and veal steaks, chops and roasts should reach 145°F (63°C) and rest for at least three minutes. Colour alone is not a reliable safety test.
  4. Chill: Refrigerate perishable food promptly. USDA FSIS advises discarding perishable food left at room temperature for more than two hours, or one hour when the surrounding temperature is above 90°F (32°C).

For leftovers, the USDA FSIS guidance recommends dividing large amounts into shallow containers so they cool more quickly. Refrigerated leftovers should generally be used within three to four days. These are practical controls, not guarantees: if an official notice names a product, follow that notice even if the food looks or smells normal.

Why the risk to young children matters

WHO’s emphasis on children under five is especially relevant to family cooking. Young children can be more seriously affected by foodborne illness, so the margin for casual handling is smaller when preparing their meals. That means checking temperatures rather than relying on appearance, keeping raw and ready-to-eat foods apart, and treating refrigeration time as a safety limit rather than a quality preference.

The same principle applies to pasteurized products and safe water. Pasteurization is a controlled process designed to reduce harmful microorganisms; it is not something a home cook can confirm by sight. Choose products from reliable sources, follow label instructions and avoid substituting smell, taste or appearance for an official safety instruction.

Why this update matters beyond the kitchen

WHO says the new estimates are intended to help countries compare food-safety threats, prioritize interventions and strengthen surveillance. The announcement also highlights the need to connect public health, laboratories, food systems and environmental information. That work may seem distant from cooking, but it is what allows authorities to identify patterns, investigate contamination and communicate when consumers need to act.

For home cooks, the takeaway is deliberately modest: the WHO update does not create a new household rule, but it gives fresh scale to an old responsibility. Keep clean, separate raw and ready-to-eat food, verify cooking temperatures, chill leftovers promptly and follow official alerts when they apply. Those habits cannot eliminate every hazard, but they are practical steps that turn food-safety evidence into safer decisions at the counter.
