WHO food safety estimates put everyday kitchen habits in focus
The WHO's updated global estimates make the case for disciplined everyday food handling, especially when cooking for young children.

The World Health Organization has put a new number on a familiar kitchen concern: unsafe food caused an estimated 866 million illnesses and 1.5 million deaths worldwide in 2021. The figures come from the WHO's updated global burden estimates, released on 4 June 2026 ahead of World Food Safety Day.
For home cooks, the useful part is not the headline alone. The release shows where food safety matters most: in the ordinary decisions made before, during and after a meal. WHO says its analysis covers 42 major hazards, including bacteria, viruses, parasites and chemicals, across 194 countries and the years 2000 to 2021. It also adds hazards that were not included in the previous assessment, including metals, rotavirus and Trypanosoma cruzi.
What the new WHO estimates say
Biological hazards caused the majority of foodborne illnesses in the 2021 estimates, with approximately 860 million cases. Chemical hazards, however, accounted for a disproportionate share of deaths: WHO says they were linked to 73% of deaths from contaminated food in 2021. Inorganic arsenic and lead were the largest contributors within that group, according to the release.
The burden is not shared evenly. Children younger than five face almost three times the risk of illness from unsafe food compared with older children and adults. Although children under five represented 9% of the world's population, they experienced nearly one third of foodborne disease cases, WHO says. That makes careful preparation especially important when cooking for babies, toddlers or anyone with a higher risk of serious illness.
These are estimates, not a count of today's cases. They describe the latest global assessment, whose underlying data run through 2021. WHO also makes clear that the analysis could not include every possible hazard because some did not have enough data. That distinction matters: a stronger estimate is not the same thing as a sudden change in the safety of a particular ingredient or recipe.
The kitchen decisions that still matter
WHO points to improved water, sanitation and hygiene, pasteurisation and safer food practices as measures that can prevent illness. At home, that translates into a short, repeatable routine:
- Choose pasteurised milk, juice or other products when pasteurisation is relevant to the food and the label gives you that choice.
- Keep raw animal foods away from ready-to-eat ingredients, plates and utensils. Wash hands and clean work surfaces after handling them.
- Cook foods thoroughly and use a food thermometer when appearance cannot reliably show that the centre is hot enough.
- Chill perishable leftovers promptly, using shallow containers when a large batch would cool slowly, and follow the storage advice from your local food-safety authority.
This is a practical interpretation of the WHO announcement, not a new WHO household rulebook. The release does not introduce a new cooking temperature table or a new storage deadline. Those details depend on the food and the national authority advising you. The durable message is to make the basic controls automatic rather than relying on smell, colour or habit alone. The CDC's current prevention guidance also recommends the clean, separate, cook and chill sequence for reducing food-poisoning risk.
Why the report is useful now
The estimates also explain why food safety cannot be treated as a problem solved only at the farm, factory or restaurant. Contamination may begin long before food reaches a kitchen, but handling at home can still prevent some hazards from spreading or surviving. That is particularly important during warm weather, when outdoor meals, packed lunches and long serving times make temperature control harder to judge.
WHO's figures also help put risk into perspective without turning every meal into a scare story. Most food is eaten without incident, and the estimates cover a vast range of hazards, foods and places. The sensible response is targeted: protect high-risk people, use pasteurised products where appropriate, separate raw and ready-to-eat foods, cook with a thermometer when needed and cool leftovers deliberately.
For families cooking for young children, the safest upgrade is often simple equipment and a clear order of work: prepare ready-to-eat foods first, handle raw ingredients later, then clean before serving. Do not taste food with a utensil that has touched raw meat, poultry, seafood or eggs. If a product is subject to a recall or safety alert, follow the official instruction rather than trying to rescue it by cooking.
The WHO release is ultimately a call to turn evidence into habits. Its global numbers are measured across years and countries, but the useful response happens at the next meal: clean hands, controlled temperatures, separation and a little more attention to the people most vulnerable to foodborne illness.
