FAO’s New Clostridia Review Puts Leftover Safety Back in Focus

A new FAO review explains why bacterial spores can survive common controls and gives home cooks a practical reason to cool, store and reheat leftovers carefully.

On 3 August 2026, the Food and Agriculture Organization of the United Nations published a new review of toxigenic Clostridia in foodborne disease. The document examines Clostridium botulinum, Clostridium perfringens and Clostridioides difficile, along with their prevalence, foodborne risks, detection methods and control measures.

The announcement is aimed at food-safety professionals, but it carries a useful message for home cooks: safe cooking is not only about reaching a final internal temperature. Prompt chilling, careful storage and thorough reheating also matter, particularly when cooked food is prepared in large batches or held for later meals.

Why Clostridia are different

FAO notes that Clostridia can form dormant structures called spores. Those spores may persist for long periods in farm and processing environments and can survive harsh conditions. The review says they are resistant to common food-safety controls such as cooking, pasteurization and certain sanitizers.

That does not mean ordinary cooking is pointless, nor does it mean every leftover is dangerous. It does mean that a cook should not treat reheating as a complete reset after food has been held incorrectly. For leftovers, the controllable steps are time and temperature: move food into refrigeration promptly, keep it cold, and reheat it thoroughly before serving.

The FAO review also reflects the fact that different Clostridia create different hazards. Some are associated with toxins, while others are linked to illness when conditions allow them to grow. The document is a scientific review rather than a household recipe, so it does not replace product-specific recalls or national food-safety advice.

The leftover routine that makes sense

For home cooks, the safest routine is simple and repeatable:

  1. Plan the journey home. If you expect to spend time at a cinema, shopping centre or another stop after eating out, do not take perishable leftovers with you. Bring them directly home instead.
  2. Refrigerate without delay. Put leftovers in the refrigerator as soon as possible. Use clean containers and divide a large quantity into smaller portions so it cools more efficiently. Keep the refrigerator at 40°F (4°C) or below.
  3. Label the date. Meat and poultry leftovers can be kept refrigerated at 40°F for up to four days, according to FoodSafety.gov. If you will not eat them within that window, freeze them at 0°F (-18°C) or below for best quality.
  4. Reheat evenly. Reheat leftovers to an internal temperature of 165°F (74°C). In a microwave, spread food evenly and stir or rotate it halfway through heating to reduce cold spots. Check the thickest part with a food thermometer.
  5. Use the right appliance. FoodSafety.gov advises against reheating leftovers in a slow cooker because food may remain too long in the temperature range where bacteria can multiply. Reheat soups, sauces and gravies to a boil, then check that the food is hot throughout.

What the FAO update changes for everyday cooking

The review does not announce a new household rule or identify a new consumer recall. Its value is explanatory: it shows why food safety depends on several barriers working together. A clean utensil cannot correct prolonged warm storage. A hot oven cannot reliably undo every earlier handling mistake. A refrigerator that is too warm reduces the margin of safety even when food looks and smells normal.

That last point is important. Harmful bacteria and toxins cannot reliably be detected by sight, smell or taste. Do not sample food to decide whether it is safe. When the storage history is uncertain, discarding the food is the safer choice.

The same principle applies to batch cooking. Cool a large pot of rice, stew or soup in smaller containers rather than leaving it in a deep pot for a long time. Keep serving dishes cold until the meal begins, and return leftovers to refrigeration promptly after eating. If food has been reheated once and part of it remains, refrigerate the remainder immediately instead of repeatedly warming the full batch.

A narrow, useful takeaway

FAO’s new review is not a reason to avoid leftovers. It is a reason to make the leftover routine more deliberate. Cook food properly, but also control the hours before and after cooking.
